Well as the saying goes "you learn something new every day" and i certainly did. Yesterday whilst i was browsing one of my favourite cake decorating sites i discovered some pictures of ice-cream cone cupcakes. They looked really cute and i was very interested in giving them a go. The part that had me baffled was how these cupcakes were baked. You put the cupcake mixture inside of the ice-cream cones (the flat bottomed cup style ones) and place them into the oven, baking the cupcake inside of the cone. Needless to say i was intrigued and was dying to give these a go (you know how i like a new challenge). I was wondering if the cone would go soggy once the cupcake mixture was placed inside or if the cones would burn in the oven, i just didn't see how it would work. Anyway today i mixed up my cupcake mixture, placed it into the ice-cream cones, placed the cones onto a tray and into the oven they went. I wasn't sure what temperature to bake them on, so i guessed around gas mark 3 and they were fine. When they were ready i took them out of the oven and was surprised that they had risen beautifully and the cones were still intact with no sign of burning or discolouration. I then placed them on a cooling rack and once they were cool i piped them with butter cream and decorated them. I was very happy with the results and i can't wait to make these again.

Ice-cream cone cupcakes.
